Here in North Carolina, we went from sleet to 85 degrees in less than a week. The summery temperatures sent me to the internet in search of summer recipes and chlodnik sounded like it would hit the spot. If you’ve read Reservations for Two, you may remember that chlodnik is a popular cold beet soup in Poland. Sweet from the beets and sour from the sour milk (yogurt or buttermilk can be used if you don’t have proper sour milk), the soup hits the spot on a warm summer day. You can make it ahead of time and store it in the fridge for company. And how often do you get to serve a soup that’s such a lovely color of pink?
Like all traditional recipes, there is no “official” version, so here are some to try:
From Coffee and Vanilla: This version uses the leaves from the beets, as well as the roots (handy if you hate waste)
From A Cat in the Kitchen: A version with the added fiery bite of radish
From the Los Angeles Times: Simple, with tang from sour cream
and my favorite (for novelty purposes as I don’t like canned beets unless my mom has canned them)
From Ancestors Gotta Eat: A retro version with canned beets and ice cubes
